Sweet Pickles…………Easy and Sweet!!!

Summer is coming to a close and the garden’s are producing some late blooming goodies.

I got my hands on some good seedless cucumbers or some might call them “burpless” even “English”, in any case I like using these cucumbers for making pickles, so I had about 30 minutes on my hands and I made Sweet Pickles šŸ™‚

Ingredients

Slice the cucumbers, I used my Wolfgang Puck’s Crinkle Cutter šŸ™‚

Put into a colander, sprinkle with salt, let set for 30 minutes

In a medium saucepan add, sugar, salt, onion powder, mustard & celery seed

Add both vinegar’s

Add colman’s mustard and stir to combine

Bring to a boil

Rinse the salted cucumbers

I used a 2 quart jar

then vinegar mixture, fill to the top, put lid on, let cool about an hour on the counter, then keep in refrigeratorĀ

Eat them plan or on a burger…how about a grilled cheese šŸ™‚

Recipe

4 Cucumbers (seedless, burpless, English)
2 tbsp. mustard seed
2 1/2 tsp. kosher salt, divided
2 tsp. celery seed
2/3 apple cider vinegar
2 3/4 cup white vinegar
2 1/4 cup white sugar
1/4 tsp. onion powder
1 tsp. colman’s english mustard

Slice cucumbers and place in a colander, sprinkle with 2 tsp. kosher salt and toss, let stand in sink to drain for 30 minutes.

Meanwhile in a medium sauce pan add sugar, 1/2 tsp. kosher salt, onion powder, mustard & celery seed, then add both vinegar’s, stir in colman’s mustard, bring to a boil, let boil for 1 minute. Ā Remove from heat.
After 30 minutes rinse the cucumbers with cold water, then add cucumbers to the jar. Ā You can use any size jars, just fill your cucumbers to the top. Ā  Add liquid to jars covering the cucumbers, put the lid on and let stand on the counter for an hour. Ā Keep in refrigerator, and eat them up šŸ™‚ Ā

Summer Grilling Recipe #1

Well as summer is here and the grills start to get cleaned and great smellsĀ permeateĀ the air šŸ˜›
I do love me something grilled, so as the summer goes on I will be posting some easy grilling recipes.

This one is just dang simple…who doesn’t like potatoes and onions on the grill šŸ™‚

I’ve been wanting to do a little grilled so called potato salad…

And I picked up some Colman’s Original English Mustard…it has a kick and I like that!!

I’ve been wondering what to do with it so I came up with this…

Ingredients

Chopped my potatoes and onions

In a large bowl add, vinegar, mustard, brown sugar & oil

Whisk it

add potatoes and onions

stir to coat and let set for a least an hour

Put into a grill basket, keep the access dressing for later

add a little more dressing just to coat once finished, then serve

Recipe

4 potatoes, cubed in 1 inch pieces
1-2 large sweet onions, 1/2 inch slices, then in half again

you don’t want them to small but not too big either, remember your onions will shrink up so keep 1/2 inch strips about 3 inches long.

MarinadeĀ 
5 tsp. Colman’s Original English Mustard*
1/4 cup apple cider vinegar
3 tbsp. extra virgin olive oil
3 tbsp. brown sugar

In a large bowl add all ingredients forĀ marinadeĀ and whisk together, add potatoes and onions and toss to fully coat, set aside for a least one hour, stir to coat every 10-15 minutes.

Add potatoes and onions to grill basket,Ā reservingĀ the marinade. Ā Grill on low stirring mixture everything few minutes. Ā As potatoes and onions cook drizzle the extra marinade over top each time until potatoes areĀ tenderĀ and cooked through.Ā 

Extra Dressing

3 tsp. Colman’s Original English Mustard*
2 tbsp. apple cider vinegar
1 tbsp. brown sugar
add Ā the mustard, vinegar and sugar all to a small bowl and whisk together, toss with grilled potatoes and onions and serve.

*Note – If you cannot find the Colman’s in a “Mustard” form and can only find it in dry form, just take the amount in the recipe in dry and add just a little water until you make mustard šŸ™‚
