Mexican Street Corn Salsa

This Salsa is using Corn on the Cob, in our stores we have some really sweet corn, and its hard to sample out an ear of corn LOL!! 😛

I was also told that Mexican Street Corn was trending 🙂

So I made it into a salsa with some other bits added, I also used a local company here in town that sells Gourmet Herbs and Spices.

We have partnered with them and we now have a great selection of some of their Herbs and Spices.

Summer is great for corn, so next time you pick some up, pick up some extra and try my recipe!!

This would be a great straight up Corn Salsa, just do not add the Sour Cream, Mayo or cheese, or heck add the cheese…LOL

This is the base mixture, corn, tomatoes, onion, cilantro & lime juice

I added the sour cream, mayo and seasonings and let set over night.

Right before serving I added the Cheese (I used Feta since our stores do not carry Cotija Cheese either works)

Now just serve with Chips!!

Chef Amy's Mexican Street Corn Salsa

6 ears Corn on the Cob, cooked & cut off the cob
½ cup mayo
½ sour cream
2 tsp. lime juice
2 tsp. Colonel De’s – Chipotle Spice Blend
1 tsp. Colonel De’s Garlic Goodness
½ cup fresh cilantro, chopped
3 Tbsp. onion, diced
1 container grape tomatoes, diced, about 1 ½ cups
6 oz. Feta Cheese crumbles (or Cotija Cheese)

Mix all ingredients together except Feta Cheese, let mixture chill for at least an hour or longer.  Right before serving stir in Feta Cheese, and serve with Tortilla Chips.  Enjoy!!

Summer Cooking Class Series!!

Yes I know I have been a little “MIA” lately!!!

But this summer has been busy and I can’t believe its JULY!!!! 
I have my hand in so many different little things that I am just so busy and it’s been hard to find the time to blog.  Plus I have not been cooking anything really good for myself, so hence no blogs.

But I did finish a couple weeks ago a cooking class series that I did in 3 of our stores 🙂

They all turned out great, a lot of grilling and a few out of the box recipes, beer sampling with one too!!

Here are a few pictures of the dishes and the crowds, it was a great time and I had a LOT of help from some of GREAT co-workers.

Super Bowl 2014!! Seahawks Win!!!!

Congratulations Seattle Seahawks on your 2014 Super Bowl Win!!!!

I must say I am happy that Seattle won, they really controlled the entire game, which was a lot easier to watch then sitting on the edge of your seat with the score going back and forward 🙂

So I was able to enjoy the commercial’s (which some fell short) and I do have my favorites 🙂

And talk about an AMAZING Halftime Show!! Bruno Mars is such an amazingly talented man, I have  always enjoyed seeing him preform on “Award” shows 🙂

But before we get to all of that, I did a Super Bowl snacking spot for one of our local news channels, guacamole and Bean and Corn salsa along with Endive Taco Boats.

Bean and Corn Salsa recipes are a plenty as well as guacamole recipes but this is how I make mine 🙂

Bean and Corn Salsa Recipe

1 can black beans, drained and rinsed
1 can black eyed peas, drained and rinsed
1 can corn with peppers, drained
1 can chunky tomatoes with green chilies (mild or Hot you choose), drained
1 1/4 cup fresh pico de gallo (salsa) you mostly can find this in the produce dept. or you can just add 1/2 cup diced onion
1 tsp. garlic salt and black pepper
1 cup Zesty Italian dressing
zest of 1 – 2 limes

Mix all together, chill overnight for best flavor, you can also add and diced jalapeno for more heat.
Serve with Tortilla Chips and Endive leaves.  (can size 14.5 – 15.5)

Guacamole

3 ripe avocados
1/2 cup fresh pico de gallo or you can use your favorite salsa
1/4 – 1/2 tsp. garlic salt, to taste
juice from 1/2 or 1 lime, also to taste

Mix together and serve with Tortilla Chips and Endive leaves
You can add fresh cilantro or diced jalapeno, really you can make this your own.

Taco Endive Boats

Breast meat from 1 rotisserie chicken, shredded
4-5 tsp. taco seasoning, from powder packet

Toss chicken and seasoning together
You can place chicken in a bowl, Salsa in a bowl and guacamole in a bowl have a platter of Endive Leaves and let your guest make their own Taco Boats, chicken then salsa topped with a little guacamole.

These recipes were a big hit with everyone back at the station along with everyone at the office that got to have all the leftovers 🙂

Mango and Shrimp Salsa

This recipe is from my Cinco de mayo class, it’s fresh and delicious, great for the summer!!!

1 bag Raw Shrimp 31/40, thawed, peeled, tails off
2 ripe mango, peeled, seeded, cut into ¼-½ inch pieces
2 cups jicama, diced
2 roma tomatoes, diced
2 tbsp. lime juice
4 tbsp. orange juice
1/2 cup cilantro, chopped
1 tsp. sugar
1 jalapeno, seeded and diced
In a bowl add all ingredients except shrimp, and chill for couple hours.  In a medium  sauce pan add water and bring to a boil, once boiling add 2 tbsp. sugar, yes I said sugar, stir to dissolve then add shrimp, cook shrimp just about 30 seconds until shrimp turn opaque, remove shrimp and add to a large bowl with ice and water to stop the cooking.  Drain shrimp, and chop, add to mango mixture, serve or chill until ready to serve.

I made mini tortilla chips for this dish, I took large flour tortillas, a 3.5 – 4 inch round cookie cutter and cut 4 rounds out of each large tortilla.  I then fried them in coconut oil, adding about 1/2 inch of oil to a large skillet, fry flipping them to brown on both sides.  Then place on paper towels and sprinkled them with a little kosher salt.

Everyone loved this recipe, it may take a little time, but its so worth it and everyone will be able to taste the love…

Other suggestions, use boston, bibb lettuce leaves to make a nice wrap, or just serve over a bed of lettuce as a fresh summer salad.
Add diced fresh pineapple as well, leave  out the shrimp, add the pineapple or just with the mango and serve with grill fish or chicken…Enjoy!!!
